Ninkasi microbreweries are digitalizing their Health Control Plan
with Testo Saveris Restaurant
The microbrewery and restaurant chain, which has 18 outlets in the Rhône-Alpes region, has chosen to digitize its entire health management plan (PMS) using the centralized Testo Saveris Restaurant solution from Testo.
Subject to the strict rules of HACCP, a procedure guaranteeing the traceability of foodstuffs and monitoring of the cold chain, Ninkasi has thus opted for solutions:
">. for checking frying oils (multifunction handle with probe),
">. for controlling core cooking temperatures (testo 104 IR BT bluetooth infrared thermometer),
">. and temperature recorders installed on the cold rooms to provide alerts in case of exceeding the critical threshold.
When connected, all these devices automatically send the recorded measurements to a tablet, a true operational control unit, which allows for quality procedures to be validated and remote monitoring to be accessed. Recorded on the tablet, this data is saved in the cloud.
Thanks to testo Saveris Restaurant, the Ninkasi chain has simplified and secured the procedures and controls imposed by HACCP.
